Blueberry Vanilla Protein Loaf

Ingredients

  • 1 ½ cups Flourish Vanilla Protein Pancake Mix
  • ¼ cup flaxseed meal
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup almond milk
  • 2 ripe bananas, mashed 
  • ¼ cup vanilla yogurt
  • ⅓ cup maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 1 cup blueberries,  fresh or frozen

           

          Instructions

          1. Preheat oven to 350F. Grease and line a loaf pan and set aside.
          2. In a medium bowl, whisk Flourish, flaxseed meal, baking powder and baking soda together. Add two thirds of the blueberries into the flour mixture to lightly coat them (this will help prevent them from sinking to the bottom).
          3. In a large bowl,  whisk almond milk, bananas, yogurt, maple syrup, vanilla, and lemon juice together.
          4. Add the dry ingredients into the wet mixture and fold until smooth and no dry streaks remain
          5. Transfer batter into the loaf pan and top with remaining blueberries.
          6. Bake for 50 minutes or until cooked through. Remove the loaf from the pan and cool on a cooling rack before slicing.
